THE ORIGIN AND USES OF VINEGAR
Vinegar is a liquid condiment produced by using bacteria to transform an alcoholic
solution into a solution containing 4% to 12% acetic acid.
The production of vinegar probably dates
back to the invention of wine since it starts to become acidic when left in the open air for any
length of time. The word "vinegar" is a combination of two French words, "wine" (vin) and "sour"
(aigre).
Vinegar, available in many varieties and has many distinctive uses. For thousands of years it has been used as a preservative,
cooking ingredient, condiment and even as a cleaning solution.
The quality of vinegar depends upon the quality of the wine or other liquid on which it is based, and flavors are as varied as the liquids from which they are made.
