Originally from Latin America, the sweet (or bell) pepper belongs to the nightshade family of plants that includes the eggplant, tomato and potato.
Seeds dating from 5000 B.C. are thought to belong to a wild variety of today's sweet pepper.
The cultivation of peppers around the world has been attributed to the
travels of Spanish and Portuguese explorers. Today, the main producers of sweet peppers are in China, Turkey, Nigeria,
Spain, Mexico and Romania.
There are
dozens of varieties varying in size, shape and color. It's a fleshy-walled berry that is plump, with a soft, delicately sweet flavor.
The most popular North American variety has
four lobes and is sort of square in shape. Green peppers are harvested early, before being fully ripe.
When left on the plant they turn yellow and then red. As they ripen on
the plant they become sweeter, with red and orange peppers being the sweetest.
One of the first plants to be cultivated in South America, the chili pepper was
originally grown for its decorative value. It wasn't until much later that its usefulness as a culinary ingredient was discovered.
Today, cultivated on all continents, Mexico
and the West Indies produce the greatest varieties. Chili peppers have a very sharp, fiery flavor.
