These are mainly made from durum wheat flour and/or durum wheat semolina.
There are also whole wheat pastas made from other kinds of flours, but since wheat flour is the only
one that contains the gluten that gives the dough the required texture. Whole-wheat pasta is becoming
increasingly available, in wholefood markets, health-food stores, and supermarkets.
