Pasta shapes made from the same kind of dough taste exactly the same, it is the shapes and the names that bring the variety to the range of pastas.
Diversity is also achieved through different types of dough, some made from whole-grain flours.
There are hundreds of recognized shapes of pasta, but only two or three dozen are generally available in the United States.
When experimenting with unusual shapes, be sure to consider the final appearance of the final dish after
the sauce and any garnishes are added.
