Garlic has been known for its persistent, distinctive flavor since ancient times. It's one of the oldest cultivated plants,
having been grown for over 5000 years. In ancient Egypt during the building of the pyramids, slaves were given a daily
ration
of garlic because it was believed to increase endurance and strength. Greek athletes ate it as a stimulant and soldiers
consumed it
before going into battle. The Crusades spread garlic all across Europe. Garlic has also been thought to have therapeutic
powers as
well as the ability to protect against the plaque.
Today garlic is produced in China, South Korea, India, Spain and the United States. The garlic bulb is made up of a cluster
of from
12 to 16 cloves. The bulb and the individual cloves are covered with a paper-like whitish skin. There are over 30 different
varieties, including white garlic,
pink garlic and purple garlic. Spanish, or giant, garlic is similar but has a slightly milder flavor.
Garlic has been proved to have many medicinal values. It was widely used as an antibiotic during Word War 1. It is
also of benefit to
the cardiovascular system, on blood cholesterol levels. Victoria offers garlic in two ready-to-use varieties, peeled cloves

often used as a condiment, in soups, vinaigrettes, vegetables, tofu, meats, stews and marinades.
